Pumpkin Spice Churros

They are running at me at full speed… arms extended with hunger in their eyes. I’m running as fast as I can but my legs will not go any faster. My lungs are working so hard that it feels like I’m breathing in fire. In a state of utter panic, looking over my shoulders every few seconds as I try to get away, I miss my step and fall to the ground. I scream as I am swarmed by the countless pairs of Ugg boots and leggings. This is the consequence of possessing a plate full of Paleo Pumpkin Spice Churros.

Did I just say Paleo Pumpkin Spice Churros? Yes, you heard me right. This week, I have created these delicious paleo friendly Pumpkin Spice Churros. They are tossed in pumpkin spice so we have ourselves some powerful Basic-B bait. Besides them being Paleo, you will not be able to tell the difference from the real thing. It took every ounce of self-discipline to not eat all of them before I took pictures!

A few months ago, we went to a Mexican grocer that sold freshly made churros. At that moment, I decided that I was going to commit Paleo sin and indulge in gluten goodness. The churro was nothing like what I had before. It was crispy but chewy on the inside, filled with dulce de leche! Holy smokes! That just blew all the other BS out of the water. I created these Paleo Pumpkin Spice Churros so that I can indulge without the gluten-guilt and I cannot wait to share this with you.

Paleo Pumpkin Spice Churros

1¾ Cup – Otto’s Natural Cassava Flour

¼ Cup – Gold Nugget Ghee

3 Tbsp – Light Brown Sugar¹

½ Cup – Raw Cane Sugar²

1 Cup – Water

Pinch – Salt

1 Tsp – Pure Vanilla Extract

3 – Large Pasture Raised Eggs

1 Liter or more – Oil for frying (Your choice)

 

Toppings:

 

2 Tbsp – Pumpkin Pie Spice

1 Cup – Raw Cane Sugar

¼ Cup – Love Bean Fudge Sea Salt Caramel³

Note¹: You can substitute with Coconut Sugar

Note²: You can substitute w/ Palm Sugar Blocks/Honey. Add extra cassava flour to thicken.

Note³: If you allow dairy in your diet, substitute with Delce De Leche

This week, we really do not have much to touch on as far as ingredient wise… who am I kidding!? Of course there is something to say about my Paleo Pumpkin Spice Churros. The main ingredients are cassava flour and pumpkin spice. Both of these are crucial to a delicious result. There are a ton of cassava flours out there and I have tried almost all of them and none of them perform as well as Otto’s. As for pumpkin spice, you can find the stuff everywhere but not everything is created equal. Don’t skimp out on it. I actually make my own because I trust my spice source. Without further ado, let’s get frying!

 

Churros Instructions:

 

paleo pumpkin spice churrosLet’s make these paleo friendly churros. I suggest you Youtube a few churro recipe videos to get familiar with the process. There is nothing different in creating the Paleo Pumpkin Spice Churros compared to your everyday gluten churros. First, I like to create my pumpkin spice sugar in a dish. Next, we will make the churro dough. Start off by heating the water, ghee and sugars in a decent size pot. Once the liquid starts to bubble around the edges, add in your flour. Keep stirring until no lumps remain. Remove the pot from heat and add in vanilla extract and your eggs. I suggest adding one egg at a time and mix vigorously. The dough should remain shiny.  Time to fry up our Pumpkin Spice Churros!

Get a pot or deep skillet and fill it with 2.5 to 3 inches of oil (your choice) over medium heat. While you wait for the oil to heat up, lets prepare our piping bag. I like to use a Wilton 1M Star Tip with a 16 inch cloth piping bag. I like to use cloth bags instead of plastic because the dough is thick and can easily bust through a plastic bag. Drop a small piece of dough into the oil. If it floats and starts bubbling, it is ready. Pipe the dough directly into the hot oil. Once you have your desired length, use a knife or a pair of scissors to clip it. It fries rather quickly. Fry until they are golden brown. Once they are done frying, remove from oil and set on a cooling rack with a cookie sheet underneath. Don’t forget the cookie sheet or else you will have an oily mess underneath it. Toss the churros in the pumpkin spice sugar, serve with a side of Love Bean Fudge’s Sea Salt Caramel or dulce de leche. There you have it, my Paleo friendly Pumpkin Spice Churros.
