Paleo Graham Crackers

The reason I made Paleo Graham Crackers this week along with my blueberry pie popsicle is not just that it’s a match made in heaven but because of a much more practical reason. One of them is that graham crackers are a staple in many dessert recipes but most importantly for my son. When he was a year old we found out he had a high risk nut allergy. Dev was devastated because Rue bear would never experience the joys of a pb&j or a Reese’s cup but also because of the extra danger he faces just being around other kids. Anyone who has a child or children with food allergies knows how difficult that can make snack time. One of my son’s favorite snacks are graham crackers. With product recalls due to contact with nuts and food that’s processed around nuts, finding him a quick snack he loves can be a pain. We have steadily been cutting gluten from his diet, so it seemed like a perfect opportunity to create a gluten-free and paleo alternative to store bought graham crackers. This way I know exactly what went into the Paleo Graham Crackers that he is eating. Let’s get “cracking”!

Paleo Graham Crackers:

¾ Cup – Otto’s Cassava Flour

¼ Cup – Organic Gemini Tigernut Flour

¼ Cup – Tapioca Starch

¾ Cup – Coconut Sugar

½ Tsp – Baking Soda

½ Tsp – Paleo Baking Powder

2 Tsp – Ground Cinnamon

Pinch – Salt

2 Tbsp – Honey

1 Tsp- Molasses

¼ Cup – Gold Nugget Ghee (Room Temp)

2 Tbsp – Organic Gemini Horchata Original / “Milk” of your preference

I’m going to keep this recipe very short and “sweet.” To start the Paleo Graham Crackers, preheat your oven to 350ºF. In a mixing bowl/food processor, mix together all ingredients except for the milk. Add the milk one tbsp at a time until a dough is formed. Roll the dough in between parchment paper or silicone mats into ¼-inch thick. Use knife to pre-cut the rolled out dough and use a fork to poke holes all over. Transfer the rolled out dough onto a cookie sheet lined with parchment paper. Bake the Paleo Graham Crackers until they are golden, between 25-30 Minutes. After they are done baking, remove from the oven and allow to completely cool on a wire rack. The crackers will not be crispy when it first comes out of the oven, but it will once it’s cooled.
