Elderflower Blueberry Pie Popsicles

It is mid-July and the temperature outside is comparable to the Amazonian rainforest. Although not sunny, the shaded humidity is definitely sweat inducing! We are obeying our weekly ritual of visiting my local farmers’ market. As we make small talk and rediscover all the fresh produce, we see pints of freshly harvested blueberries. It was like love at first sight. Those gorgeous, blue pearls will be my ingredient for the week. I really wanted to make a blueberry pie but, in this heat, I wanted something that will put out the fire. I’ve decided to combine the two and make a Elderflower Blueberry Pie Popsicles.

Oh Popsicle, how you trigger one of my favorite yet most embarrassing food stories. When I was kid, we witnessed the grand opening of Hong Kong’s very own Time Square. The top floors were filled with restaurants. My favorite was the Thai buffet because of the handmade coconut Popsicles. It’s gimmicky and I loved it! They were so delicious! Here goes the embarrassing part. One time, I skipped out on the rest of the buffet and ate nothing but Popsicles. I ate so many that I not only lost count, but I threw up. In my defense, I was left unsupervised. Since I am left unsupervised now, we are going to make Paleo Elderflower Blueberry Pie Popsicles.

Paleo Elderflower Blueberry Pie Popsicles:

Popsicle:

 

3 Cups – Organic Gemini Horchata Original / “Milk” of your choice

¼ Cup – Otto’s Cassava Flour

¼ Cup – Honey

3 Tsp – Vanilla Extract

 

Elderflower Blueberry Syrup:

 

1 Pint – Fresh Organic Blueberries

¼ Cup – Water

½ Cup – Honey (More/Less to your preference)

Juice of 1 Lemon

Zest of 1 Lemon

3-4 – Whole Cloves

2 Tbsp – Elderflower Syrup/Extract

 

White Chocolate Drizzle (Optional):

 

½ Cup – White Chocolate Chips

¼ Cup – Kasandrinos Extra Virgin Olive Oil

 

Other:

 

¼ Cup – Crushed Paleo Graham Crackers

Paleo Elderflower Blueberry Pie PopsiclesLet’s talk about the ingredients for the Elderflower Blueberry Pie Popsicles. There are many items in this recipe, which you can substitute with ingredients that fit your needs. That’s the great thing about the Paleo Diet. It is not a rigid calorie counting diet. It is a guideline and you have control of it because every person is unique. The blueberries need to be fresh. Frozen blueberries tend to lose some of it’s flavor. The white chocolate drizzle is optional because there are many people who avoid dairy. As for the Elderflower syrup, I know some of you are thinking, it’s made with sugar. It sure is. Sugar is not all bad. These Elderflower Blueberry Pie Popsicles should be a treat, not a staple. It’s OK to commit a little paleo sins here and there! Let’s get working!

 

Elderflower Blueberry Syrup Instructions:

 

To create the syrup, it is super easy. In a pot, combine all of the ingredients except for the elderflower syrup. Bring the mixture to a boil, reduce the heat and continue to cook until reduced into a syrup; about 10-15 minutes. Do NOT let it cook too long and get too thick. If you do, you will end up with a jam instead. Strain the syrup through a fine sieve. Do not toss away the cooked blueberries. These will be the blueberries you add into your Popsicle mixture. Once you have strained the syrup, add Elderflower syrup and mix well. Remove from the heat, let cool and refrigerate. Let’s move on to the next component for the Elderflower Blueberry Pie Popsicles.

 

Popsicle Instructions:

In a blender, blend all of the Popsicle ingredients until smooth. Heat the mixture in a pot until it comes to a boil. Once the Popsicle mixture has thicken for the Elderflower Blueberry Pie Popsicles, remove it from the heat and refrigerate the mixture until completely cooled. Once cooled, spoon into Popsicle mold along with the cooked blueberries from the syrup.

 

White Chocolate Drizzle Instructions:

 

The white chocolate drizzle is probably the easiest thing to make. In a double boiler or your preferred method of melting chocolate, melt the white chocolate and mix well with olive oil. The olive oil will allow the white chocolate to remain liquid at room temperature. The drizzle can be stored at room temp until ready for use. Let’s assemble the Elderflower Blueberry Pie Popsicles!

 

Assembly Instructions:

 

Once the Popsicles are nice and frozen, you might experience some difficulty removing them out of the mold. That’s very common among making Popsicles. Run warm water over the entire mold for 30-45 seconds and it will come right out. Once it is out, drizzle the elderflower blueberry syrup, white chocolate drizzle and top with crushed Paleo graham cracker. There you have it, my Paleo Elderflower Blueberry Pie Popsicles.
