Bacon Zucchini Fritters

A few weeks ago I mentioned in my Sichuan Braised Beef Noodle Soup post that I don’t need to be deceived into eating my veggies. Well… I take that back. The truth is, I am a man-child that needs to be swindled to consume my vegetables (Dev can attest to this). I am not a big fan of veggies, never have been. If I can live off of a diet of meat, cheese and ice-cream, I would. My inner grown man knows that I will have to trick myself into eating my share. One of these tricks is my Bacon Zucchini Fritters.

These Bacon Zucchini Fritters is a perfect segue from last week’s recipe, Paleo Curry Falafels. Why? Let me explain. By definition, fritters are fried foods consisting of a batter with meat, vegetables or fruit. So if you look at the anatomy of a falafel, it fits the definition of a fritter.

So, what makes a fritter so delicious? Well first off, it’s fried. That explains it all. No? There is a multiple change in textures, and flavors. Take my Bacon Zucchini Fritters for example. You have the vegetables that have the sweetness, the savory spices and of course, bacon. Bacon makes everything better. Why? Because cured meats and fermented foods contains what we would call, umami.

Paleo Bacon Zucchini Fritters

3 – Medium Zucchinis (Shredded)

3 – Carrots (Shredded)

1 – Medium Yellow Onion (Fine Dice)

2 – Shallots (Diced)

5 – Cloves Garlic (Minced)

2 – Stalks Green Onion (Fine Diced)

½ Tsp – Thyme

1 Tsp – Fresh Parsley (Chopped)

¼ Cup – Organic Gemini Tiger Nut Flour

½ Cup – Otto’s Natural Cassava Flour

1 Tsp – Baking Powder

Salt and Pepper to taste

Flavor God Cajun Lovers’ Seasoning (Optional)

4 Stripes Bacon (Crisp and diced)

5 Slices Ham (Fried and diced)

2 – Pasture Raised Eggs

Extra Salt for osmosis

Kasandrinos Extra Virgin Olive Oil

Special Equipment:

Grater

Muslin Cloth

Colander

Paleo Bacon Zucchini Fritters Instructions:

1.) First, grate both zucchinis and carrots. Add 1 tbsp salt and mix. Allow to sit for 15-20 minutes to displace the moisture in the vegetables. Drain with colander. Wrap in muslin cloth and squeeze out all the extra moisture. This is an important step to ensure the Bacon Zucchini Fritters to be crispy.

2.) In a mixing bowl, mix the rest of the ingredients together. If your mixture is a bit soggy because of excess moisture, add more cassava flour or tigernut flour until they have a batter consistency.

3.) In a skillet, heat previously saved bacon grease and KEVOO on medium high. Watch video above for better instructions. You can form the patties in your hand as well. Thickness is also your choice. Fry the fritters until the are golden brown. If the inside is not all the way cooked, lower the heat on the skillet and cook them for longer. There you have, my Paleo Bacon Zucchini Fritters.
